Plum Chicken Recipe
Servings: 3
Serving Size: 1 chicken breast
Ingredients:
1 lb.boneless, skinless chicken breasts
½ tsp. dry mustard
½ tsp. ground ginger
2 tbsp. lemon juice
1 tsp. lemon peel, grated
¼ tsp. hot sauce
¼ cup onion, minced
1 cup Oriental plum sauce
¼ tsp. pepper
1 tbsp. worcestershire sauce
Directions:
1. Rinse chicken, pat dry, and place in a 9- by 13-inch baking dish or other shallow 3-quart baking dish.
2. In a small bowl, stir together plum sauce, onion, lemon juice, Worcestershire, lemon peel, mustard, ginger, pepper, and hot pepper seasoning. Pour over chicken.
3. Bake chicken, uncovered, in a 400 degree oven until meat is no longer pink in thickest part; cut to test (about 25 minutes). Baste chicken halfway through baking. To serve, lift chicken to a platter; spoon sauce on top.
